Wash peel and core about three pounds of pears. Cook until they soften, in boiling water. Tie into a cloth bag 6 cinnamon sticks, 2 tablespoons who cloves, two teaspoons of whole ginger. Simmer the spices with 2 cups of sugar and 1 cup vinegar. Add the pears to the spiced liquid for about three minutes. Remove and discard to spice bag. Cool and refrigerate in the liquid or process into sterile jars.
